With over 15 years experience in the hospitality industry, James has built a reputation across South Wales for his creativity, consistency and passion for conscious cooking.

His career has taken him through a variety of respected restaurants and establishments, where he refined his craft and developed a food philosophy rooted in quality, community and care. 

Many will recognise James from Karmen Kafe, where he took the reins from previous owner and transformed with café into one of Carmarthen's most beloved spots. Alongside his wife, Melanie, he helped the venue flourish - creating a welcoming space known for its delicious food, friendly service and vibrant atmosphere. 

Building on that success, James went on to establish Y Barbican - a modern bistro in the heart of Carmarthen. Under his leadership, it quickly became one of the town's standout eateries, celebrated for its inspired brunches, world influenced cuisine and relaxed yet refined dining experience. Drawing inspiration from Welsh heritage and hiraeth, Y Barbican brings together local ingredients and global flavours to deliver food that truly connects people.

Now, James and his talented team are taking the next exciting step in their journey - bringing their experience, creativity and passion for great food to Parc Y Bocs in Kidwelly. Guests can look forward to the same warm hospitality and exceptional dining that have become James' signature as he continues to champion fresh, flavourful and heartfelt cooking for all to enjoy.
